Mini Fruit Pizzas are great for kids because they are a low-stress, easy to prepare, healthy, delicious meal/snack for parents to make!

Mini Fruit Pizzas are a great source of protein and fiber. Since constipation can be common in kids it is super helpful and recommend to make sure they are eating enough fiber. This recipe features Greek yogurt, hemp seeds, strawberries and blueberries, which are a great source of calcium, iron, polyunsaturated fats, antioxidants and can benefit the brain, heart and reduce inflammation in the body.

This recipe is highly customizable! You can swap the fruits and choose sliced banana, sliced peaches or mango according to your child’s sensory preferences and nutritional needs. See below for full recipe notes.

Ingredients

  • 1/4 cup Plain Greek Yogurt (Or dairy-free yogurt of choice)

  • 1 tsp Maple Syrup

  • 2 ozs English Muffin (cut in half, toasted)

  • 1/4 cup Strawberries (sliced)

  • 1/4 cup Blueberries

  • 2 tsps Hemp Seeds

A note on ingredient quality: If possible, choose ingredients that are organic and non-GMO. Stores such as Sprouts, Natural Grocers, Whole Foods, and other health food stores can help finding higher-quality ingredients. If access to higher quality ingredients isn't an option for you, choose the best option that is available to you locally.

Directions

  1. In a small bowl, mix the yogurt and maple syrup until smooth.

  2. Divide the yogurt mixture between the English muffin halves and top with strawberries, blueberries, and hemp seeds. Enjoy!

    • Use a gluten-free English muffin.

  • Make it Dairy-Free/Vegan

    • Use a plant-based yogurt alternative.

  • Leftovers

    • Best enjoyed immediately but the yogurt mix can be refrigerated for up to three days.

  • Additional Toppings

    • Chia seeds, shredded coconut and/or nut butter.
