Eggs, Hummus & Crackers Box

Our Eggs, Hummus & Crackers recipe is super simple and great kids with autism because it’s packed with nutrients!

Eggs, Hummus & Crackers are a great source of protein, fat, and fiber. Combining these nutrients help keep your child full and nourished until the next meal/snack. The fiber from the hummus and crackers is also helpful for constipation. This recipe features eggs, hummus (chickpeas are often the main ingredient) and whole grain crackers which are a great source of calcium, iron, choline, vitamin B12, vitamin D and can benefit brain health, strong bones and muscles.

Ingredients

  • 2 Eggs

  • 1/4 cup Hummus

  • 2 ozs Whole Grain Crackers

Directions

  1. Place the eggs in a saucepan and cover with water. Bring to a boil over high heat. Once boiling, turn off the heat but keep the saucepan on the hot burner. Cover and let sit for 10 to 12 minutes.

  2. Strain the water and fill the saucepan with cold water. Let the eggs sit until cool enough to handle. Peel and cut the eggs in half.

  3. Arrange the eggs, hummus, and crackers into a container, and enjoy!

Notes

  • Leftovers

    • Refrigerate in an airtight container for up to two days.

  • More Flavor

    • Season the eggs with salt, pepper and/or chili flakes.
