Boden’s Apple Spice Loaf

One of our members has graciously shared her son’s favorite apple loaf that he eats almost every day! It is gluten & dairy-free, packed with nutrients, and has a great texture for kids with sensory aversions. Definitely give it a try. Thanks to Bre for sharing this recipe with us!

Ingredients

  • 2 eggs

  • 1/3 cup almond milk (I use Malk) 

  • ¾ cup organic applesauce 

  • 2 Tbsp olive oil 

  • 1 Tbsp vanilla extract

  • 6 Tbsp of pure maple syrup

  • 3 tsp cinnamon 

  • 1 tsp baking soda

  • ½ cup flaxseed meal 

  • 1 scoop protein powder

  • 1.5 cup oat flour (I usually add another 2 Tbsps at the end to thicken up the batter)

  • 1 Tbsp of Monkfruit sweetener

Directions

  1. Whisk together dry ingredients in large bowl and do all of the wet ingredients in medium sized bowl. Combine together. 

  2. Grease pan with coconut oil and pour batter - top with choc chips (optional)

  3. To make a loaf, bake at 325 degrees for 45 minutes. For muffins, bake for 25 minutes for muffins

  4. Cool completely, wrap in aluminum foil and place in fridge or freezer

Notes from Boden’s Mom

  • You can switch this up by substituting the apple sauce with organic pure pumpkin puree. So yummy! I will also add a shredded zucchini to the wet mixture to get in a veggie...this is best with the apple sauce version.

  • We use Be Well grass fed beef protein powder (you can use any protein powder. I also will use a collagen protein powder with a vanilla flavor).
