Our 3-ingredient banana pancake recipe is great for kids with autism because it is free from soy, grains, gluten and dairy. It’s super easy to make with only 3 ingredients and freezer-friendly. You can even get your child involved and help mash the bananas! Involving kiddos in the kitchen can help spark their interest in what they are helping to make.

This recipe is a great source of protein, fat, and fiber. Combining these nutrients help keep your child full and nourished until the next meal/snack. This recipe features banana, eggs and coconut oil which are a good source of iron, calcium, potassium, medium-chain triglycerides and can improve metabolism, fatigue, slow growth. Calcium helps to support the heart, muscles and nerves.

The cool thing about pancakes are that there are endless options for mix-ins. You can add mix-ins like blueberries, chocolate chips, or sliced/chopped strawberries. Swap mix-ins and toppings according to your child’s sensory preferences and nutritional needs.

Ingredients

  • 2 Banana (ripe)

  • 4 Eggs

  • 1 tbsp Coconut Oil

Stores such as Sprouts, Natural Grocers, Whole Foods, and other health food stores can help finding higher-quality ingredients. If access to higher quality ingredients isn't an option for you, choose the best option that is available to you locally.

Directions

  1. In a bowl, mash the bananas very well until quite smooth. Add the eggs and beat gently with a fork for about 30 seconds.

  2. Heat coconut oil in a skillet over medium heat. Add 1/4 cup of the batter at a time to form pancakes, cooking for about 1-2 minutes per side.

  3. Serve with a sprinkle of cinnamon or a drizzle of maple syrup if desired.

Notes

  • Leftovers

    • Refrigerate in an airtight container for up to three days. Freeze for up to three months. Best reheated in a dry pan.

  • Serving Size

    • One serving is approximately two pancakes.

  • Likes it Sweet

    • Add blueberries or chocolate chips into the batter.
