Our Mini Pizza & Clementine Lunch Box is perfect for kiddos and parents because of its simplicity and appeal. We know how popular pizza is with kids. These mini pizzas are cut and paired with a fruit to go in your child’s favorite lunch box.

Mini Pizza & Clementine Lunch Box is a great source of protein, fat, and fiber. Combining these nutrients help keep your child full and nourished until the next meal/snack. Since it’s a great source of fiber it can also help kiddos struggling with constipation. This recipe features an English muffin (a grain), tomato sauce, cheese, pepperoni and clementine, which are a great source of calcium, potassium, antioxidants and can fight free radicals in the body that cause damage and improve bone health.

This recipe is highly customizable! You can make it gluten free by swapping regular English muffins for gluten free English muffins. You can make it dairy free by changing to a dairy free cheese.

Ingredients

  • 2 ozs English Muffin (cut into half)

  • 1/4 cup Tomato Sauce

  • 4 ozs Mozzarella Cheese (shredded)

  • 2 1/16 ozs Pepperoni (sliced)

  • 2 Clementines (peeled, sectioned)

A note on ingredient quality: If possible, choose ingredients that are organic and non-GMO. Stores such as Sprouts, Natural Grocers, Whole Foods, and other health food stores can help finding higher-quality ingredients. If access to higher quality ingredients isn't an option for you, choose the best option that is available to you locally.

Directions

  1. Preheat the oven to 400°F (205°C) and line a baking sheet with parchment paper.

  2. Place the English muffin halves onto the baking sheet and divide the tomato sauce between each muffin half. Add some cheese to each followed by the pepperoni slices. Top each with the remaining cheese.

  3. Bake for 10 to 15 minutes or until the cheese has melted. Let the mini pizzas cool for five minutes before cutting them in half.

  4. Add to a sectioned container, if using, and add the clementines on the side. Enjoy!

  • Leftovers

    • Refrigerate in an airtight container for up to three days. Let the mini pizzas cool completely before refrigerating.
