Pineapple is a great source of vitamin C. It’s similar to papaya in nutritional value and can be a helpful substitute if your child doesn’t like papaya or is sensitive to it. This recipe features pineapple, which also has fiber and contains a special digestive enzyme that is helpful for digestion. Because of this and the fiber content in this recipe, this is a great meal for kids struggling with constipation or other GI issues.

The great thing about this pineapple is that it is highly customizable! Feel free to experiment with different types of milk instead of coconut milk, if you like! You can also swap out honey for maple syrup or agave nectar for a different taste.

Ingredients

  • 2 cups of frozen pineapple

  • ¼ cup of canned coconut milk 

  • 1 tbsp of honey

Materials

  • Food processor or blender

A note on ingredient quality: If possible, choose ingredients that are organic and non-GMO. Stores such as Sprouts, Natural Grocers, Whole Foods, and other health food stores can help finding higher-quality ingredients. If access to higher quality ingredients isn't an option for you, choose the best option that is available to you locally.

Directions

  1. Place the frozen pineapple and coconut milk in a food processor or blender. Blend on high until smooth and creamy.

  2. Add the honey into the food processor or blender and blend again until smooth. 

  3. Serve immediately.  Top the pineapple whip with your favorite toppings and enjoy!
