Our Grilled Peaches & Ice Cream recipe is the perfect sweet treat for summer that packs a powerful punch of antioxidants and fiber!

Ripe, juicy peaches are the main star of the show here. They are a great source of Vitamin C, while also providing a fun way for kids to stay hydrated. These nutrients, (plus 5g of fiber!) will help keep your child full and nourished. The fiber in peaches also helps to support healthy bowel movements and combat constipation.

This recipe is highly customizable! According to your child’s sensory preferences and nutritional needs, you can add toppings, or even swap out the ice cream,

Ingredients

  • 4 Peaches (medium, halved, pit removed)

  • 1 tsp Avocado Oil

  • 1 cup Coconut Ice Cream

A note on ingredient quality: If possible, choose ingredients that are organic and non-GMO. Stores such as Sprouts, Natural Grocers, Whole Foods, and other health food stores can help finding higher-quality ingredients. If access to higher quality ingredients isn't an option for you, choose the best option that is available to you locally.

Directions

  1. Brush the peaches with avocado oil.

  2. Heat a grill over medium-high heat. Place the peach halves on the grill and cook for two to three minutes, until grill marks appear.

  3. Divide peaches into bowls and top with ice cream. Enjoy!

Notes

Leftovers

Best served immediately after grilling, but leftover grilled peaches can be stored in the fridge in a sealed container for up to two days.

Additional Toppings

  • Chopped nuts/seeds or chocolate drizzle.
