Our Back-to-School Deli Snack Box is a great source of protein, fat, and fiber - great to keep your child full and nourished until the next meal/snack at school and promote optimal focus.

This recipe features carrots and blueberries, which are a great source of fiber and antioxidants. Both ham and cheese offer protein and fats for optimal fullness. You can swap out different types of lunch meat or cheese given your child’s preferences and nutritional needs/dietary restrictions.

This is a great and easy box to pack for school lunches. Consider using a divided Bento Box (like this one!) to keep foods separated and crackers crunchy!

Ingredients

  • 1 slice Gluten-Free Bread (Cut into 1" squares)

  • 1 oz Sliced Ham (Cut into 1" squares)

  • 1 oz Cheddar Cheese (Dairy-Free, if needed. Cut into 1" squares)

  • 1/4 cup Blueberries

  • 1/4 cup Baby Carrots

  • 1 oz Rice Crackers

  • 4 slices Cucumber

A note on ingredient quality: If possible, choose ingredients that are organic and non-GMO. Stores such as Sprouts, Natural Grocers, Whole Foods, and other health food stores can help finding higher-quality ingredients. If access to higher quality ingredients isn't an option for you, choose the best option that is available to you locally.

Directions

  1. Cut bread, ham, and cheese into 1" squares and with cucumber slices, alternate putting onto skewer

  2. Place skewers, crackers, blueberries, and carrots into a bento box and seal. If being packed in a lunch box, be sure to refrigerate or pack ice blox.

  • Storage

    • Refrigerate up to 3 days.

  • Modifications

    • Swap any ingredient out for chickpeas, assorted beans, baked chicken, deli meat, or fruit/veggies as needed.
