Our Carrot Cake Bites recipe is a great way for kids with autism to get involved in the kitchen by pouring ingredients, mixing, and touching. This can also be a way to introduce a nutrient-dense vegetable like carrots to your child. Introducing foods in a fun way such as this can be helpful for picky eaters!

Carrot Cake Bites are a good source of fat and fiber. Combining these nutrients help keep your child full and nourished until the next meal/snack. The additional fiber will also help kiddos struggling with constipation. This recipe features carrots, coconut, which are a great source of vitamin A, medium-chain triglycerides (MCTs), potassium, iron, zinc, copper and can promote good eye health, cognitive function, weight management and help reduce iron-deficiency.

Ingredients

  • 1/2 cup Coconut Flour

  • 1/2 cup Vanilla Protein Powder (choose your favorite!)

  • 1 tsp Cinnamon

  • 1/4 tsp Nutmeg

  • 1/4 tsp Sea Salt

  • 1/4 cup Maple Syrup

  • 1/2 tsp Vanilla Extract (alcohol-free)

  • 1/4 cup Coconut Oil (melted)

  • 3/4 cup Unsweetened Shredded Coconut (divided)

  • 1 cup Grated Carrot

A note on ingredient quality: If possible, choose ingredients that are organic and non-GMO. Stores such as Sprouts, Natural Grocers, Whole Foods, and other health food stores can help finding higher-quality ingredients. If access to higher quality ingredients isn't an option for you, choose the best option that is available to you locally.

Directions

  1. In a bowl, add the coconut flour, protein powder, cinnamon, nutmeg, and salt. Stir to combine.

  2. Add the maple syrup, vanilla, and melted coconut and stir again.

  3. Fold in a quarter of the shredded coconut and all of the grated carrot.

  4. Form into even balls with your hands, approximately one inch in diameter. Add the remaining shredded coconut to a plate for rolling. If the batter is too sticky, add some more coconut flour.

  5. Place in a sealed container in the fridge for about 20 minutes to slightly harden. Enjoy!

Notes

  • Leftovers

    • Refrigerate in an airtight container for up to one week or freeze for up to three months.
