Zucchini Fritters

Zucchini fritters are a great way to easily incorporate more veggies into your child’s diet that can be a snack, appetizer, or even a side dish. This dish uses eggs and almond flour to bring the flavors together and add a great source of protein, fat, and fiber. Combining these nutrients help keep your child full and nourished until the next meal or snack.

The great thing about this recipe is that it is highly customizable! You can add a variety of shredded vegetables including carrots, sweet potatoes, and broccoli according to your child’s sensory preferences and nutritional needs.

Ingredients

  • 2 cups zucchini (granted, and squeezed to drain)

    • If you want to add additional veggies instead of just zucchini, you can grate vegetables like carrots, sweet potatoes, and finely chop broccoli! All vegetable ingredients should equal about 2 cups total.

  • ½ cup flour almond flour ( any type of flour is ok too)

  • 2 eggs 

  • 1 teaspoon of salt 

  • Avocado spray

Materials

A note on ingredient quality: If possible, choose ingredients that are organic and non-GMO. Stores such as Sprouts, Natural Grocers, Whole Foods, and other health food stores can help finding higher-quality ingredients. If access to higher quality ingredients isn't an option for you, choose the best option that is available to you locally.

Directions

  1. Preheat oven to 425º F

  2. Grate the zucchini and transfer into a cheesecloth or nut milk bag and squeeze as much moisture out as you can. Place in a mixing bowl.

  3. Add all other ingredients to the bowl and mix well to form a thick mixture. 

  4. Scoop the zucchini mixture into your hand, then form the mixture into a small ball and lightly press down so they look like fritters. 

  5. Use a baking sheet with parchment paper. (You can spray the parchment paper with avocado oil so the fritters won't stick.) 

  6. Spray the fritters with avocado oil to help them get nice and crispy. 

  7. Bake the fritters for 12 minutes, and flip them over. Spray them with avocado oil, then bake for 12 minutes again.

  8. They are ready when slightly golden. Serve them with your favorite dipping sauce and enjoy.
