Sausage & Egg Quesadillas

Ingredients

  • 4 ozs Pork Sausage (casing removed)

  • 3 Eggs

  • 3 ozs Cheddar Cheese (grated)

  • 2 Brown Rice Tortilla (or your favorite tortilla!)

Directions

  1. Heat a cast-iron skillet over medium heat and add the sausage. Using the back of a spoon, crumble the sausage. Cook, stirring occasionally until cooked through, about eight to 10 minutes. Then remove the sausage and set aside.

  2. In a small bowl, whisk the eggs.

  3. In same skillet, lower the heat to medium-low. Add the eggs and cook until still somewhat soft, and cooked through. Remove from the heat and add the cheddar cheese and the reserved sausage and stir to combine.

  4. In a clean skillet, add the wrap and then add in half the sausage and egg filling to one half. Fold the tortilla in half and gently press down. Cook for two to three minutes per side or until browned and crispy. Let the quesadilla cool slightly and then cut into wedges. Enjoy!

  • Dairy-Free

    • Use a dairy-free cheese.
