These healthy mango coconut popsicles only take a few minutes to prep and the freezer does the rest! You only need two ingredients for a creamy and refreshing popsicle. Mangos have an excellent source of vitamin A, Vitamin C and Vitamin K. Coconut milk contains antioxidants, electrolyte balance and anti-inflammatory properties. These popsicles are a great treat to help kids stay hydrated for the summer. 

Ingredients

  • 2 cups Frozen Mango

  • 1 cup Organic Full Fat Coconut Milk 

    • Note: you can also use almond milk or cashew milk instead

Materials

A note on ingredient quality: If possible, choose ingredients that are organic and non-GMO. Stores such as Sprouts, Natural Grocers, Whole Foods, and other health food stores can help finding higher-quality ingredients. If access to higher quality ingredients isn't an option for you, choose the best option that is available to you locally.

Directions

  1. Blend mango and coconut milk in a food processor or blender until smooth.

  2. Scoop the mango mixture into popsicle molds

  3. Insert popsicle sticks in the middle. Place in the freezer for 4 hours or until completely frozen.
