This Cucumber, Blackberries & Hummus Snack Box recipe is the perfect, quick snack to throw together for a car ride, a day in the park, or a “fridge cleanout” day!

Cucumbers are a great source of Vitamin K, antioxidants, and water. Antioxidants are essential for healthy cell function, as is water! The Vitamin K in cucumbers will help keep your child’s bones strong and promote blood clotting. This recipe also features hummus, which is a healthy fat source that will help your child absorb the Vitamin K. It also features blackberries, which are packed full of antioxidants and fiber!

This recipe is easy to get creative with! You can swap out the hummus for another healthy fat source like full-fat yogurt, or swap the blackberries for another fruit according to your child’s sensory preferences and nutritional needs.

Ingredients

  • 1/4 Cucumber (medium, sliced)

  • 1/2 cup Blackberries

  • 1/4 cup Hummus

A note on ingredient quality: If possible, choose ingredients that are organic and non-GMO. Stores such as Sprouts, Natural Grocers, Whole Foods, and other health food stores can help finding higher-quality ingredients. If access to higher quality ingredients isn't an option for you, choose the best option that is available to you locally.

Directions

  1. Arrange the cucumber, blackberries and hummus into a container. Enjoy!

No Blackberries?

Use other berries like strawberries, raspberries, or blueberries.
